What are Micro Greens? Micro greens are young vegetable or herb starts harvested for their flavor and considerable nutrition at an immature stage of development. As opposed to sprouts, which are harvested and eaten within only a few days of germination, and baby greens, which are collected approximately one month or more after sowing, micro greens are collected while the plants are a few weeks old, have started to develop root systems and are highly flavorful. They make a great choice for those with limited space seeking a dependable and fast-growing source of food, or for those looking to add an exotic, gourmet touch to their diet.

What is needed to Grow Micro Greens?
MicroGreens TraysMicro greens can be grown in a wide variety of containers, so long as those containers are constructed of safe, non-toxic materials that could affect the health of your plants and the quality of your edibles. They should be grown indoors, or in a warm setting, as heat is essential for seed germination and optimal growth during the first stages of development. A lightweight, nutrient-rich, well-drained medium is ideal. The medium depth need not be excessively deep as most plants will not extend growing root structures more than an inch or two deep. After growing, soil can be composted and reused in future growings. Light needs are not great for crops harvested as micro greens are low to moderate, though they will grow much slower in cool conditions.

Micro greens can be used in salads, sandwiches, and a wide variety of other culinary creations. They enhance dishes with a fresh, and often unique taste, that can not be duplicated with vegetables harvested at other stages of development. Typically, micro greens can first be cultivated approximately two weeks after sowing, and can often be continually harvested for several days to weeks afterward.
